  This is a clinical, chronic study lasting eight consecutive weeks. 68 volunteers will be recruited, who will be randomly divided into 4 groups: eutrophic + green tea kombucha (n = 17); eutrophic + black tea kombucha (n = 17); obese + green tea kombucha (n = 17); obese + black tea kombucha (n = 17). Participants will be recruited through social media and in the local community. Those who apparently meet the inclusion criteria will be invited to a screening at the laboratory. This assessment will be carried out at the Energy Metabolism and Body Composition Laboratory (LAMECC), located in the Department of Nutrition and Health at UFV, 6th floor, room 50. Screening includes anthropometric and body composition as well as and questions about their nutritional, medical, and familiar history. Those who meet the inclusion criteria will be informed about the objectives, benefits and inconveniences of the study and, if they are still interested in participating, they will sign the informed consent form. Each volunteer will receive seven bottles a week, each one containing 250 mL of green tea or black tea kombucha. They will be instructed to keep the bottles refrigerated and consume one per day during the eight weeks. They will be advised to maintain their usual diet as well as their physical activity pattern throughout the study. Participants will be evaluated before the beginning of the study (time 0 = baseline) and at the end of the treatment (8th week). In these two moments, an assessment of body composition and intestinal permeability will be performed; blood, urine and feces samples will be collected from all participants, and subcutaneous adipose tissue from obese individuals. The analyzes will be made by comparing the data at the end of the treatment with the baseline data.

  Trata-se de um estudo clínico, crônico, com duração de oito semanas consecutivas. Serão recrutados 68 voluntários, os quais serão distribuídos aleatoriamente em 4 grupos: eutróficos + kombucha de chá verde (n = 17); eutróficos + kombucha de chá preto (n = 17); obesos + kombucha de chá verde (n = 17); obesos + kombucha de chá preto (n = 17). Os voluntários serão recrutados por meio de divulgação em redes sociais e panfletagem na comunidade local e será agendada uma triagem com as pessoas interessadas. Essa avaliação será realizada no Laboratório de Metabolismo Energético e de Composição Corporal (LAMECC), localizado no Departamento de Nutrição e Saúde da UFV, 6° andar, sala 50. Durante a triagem, será realizada avaliação antropométrica e da composição corporal e preenchido um questionário de seleção com perguntas sobre histórico médico, familiar e nutricional. Àqueles que atenderem aos critérios de inclusão, serão esclarecidos quanto aos objetivos, benefícios e incômodos do estudo e, caso ainda tenham interesse em participar, assinarão o termo de consentimento livre e esclarecido. Cada voluntário irá receber semanalmente sete garrafas, cada uma contendo 250 mL de kombucha de chá verde ou chá preto. Eles serão orientados a manter as garrafas sob refrigeração e consumir uma por dia ao longo das oito semanas. Eles deverão também manter sua dieta habitual bem como seu padrão de atividade física durante todo o estudo. Os voluntários serão avaliados antes do início do estudo (tempo 0 = baseline) e ao final do tratamento (8ª semana). Nesses dois momentos, será realizada avaliação da composição corporal e da permeabilidade intestinal; coletadas amostras de sangue, urina e fezes de todos os participantes, e tecido adiposo subcutâneo de indivíduos obesos. As análises serão feitas comparando os dados do final do tratamento com os dados do baseline.

  Men and women aged 18-45 years will be included. Normal weight individuals will have the following characteristics: body mass index (BMI) between 18.5 and 24.9 kg/m²; body fat percentage (BF): up to 25% for men and up to 30% for women; waist circumference (WC) less than 88 cm for women and less than 102 cm for men. Obese individuals will have: BMI greater than or equal to 30 kg/m²; BF greater than 27% for men and greater than 34% for women; WC greater than 88 cm for women and greater than 102 cm for men.

  Serão incluídos homens e mulheres com idade entre 18-45 anos. Indivíduos eutróficos deverão apresentar as seguintes características: índice de massa corporal (IMC) entre 18,5 e 24,9 kg/m²; percentual de gordura corporal (GC): até 25% para homens e até 30% para mulheres; perímetro da cintura (PC) menor que 88 cm para mulheres e menor que 102 cm para homens.   It will not be included in the study: individuals with other chronic diseases (diabetes, cancer, cardiovascular disease), renal or hepatic dysfunction, anemia and/or inflammatory diseases not related to obesity; those who: have a habit of consuming kombucha; make regular use of anti-inflammatory drugs, corticosteroids or other drugs that affect lipid or glucose metabolism; make use of antioxidant and/or vitamin supplements; used antibiotics less than 3 months before the beginning of the study; have had infectious or allergic episodes in the last month; persons under weight-loss diets or that do not have a stable weight in the last 3 months (up to 3 kg); have aversion to kombucha; have alcohol intake greater than 105 g of ethanol/week for women and more than 210 g of ethanol/week for men; smokers; pregnant and lactating women.

  After consuming kombucha for eight consecutive weeks, it is expected that normal weight and obese individuals will have a reduction in oxidative stress, assessed by the concentration of malondialdehyde in plasma using the method described by Buege & Aust (1978) with modifications. It is expected to find a reduction of at least 12% in plasma malondialdehyde concentrations after the intervention.

  Após o consumo de kombucha por oito semanas consecutivas, espera-se que indivíduos eutróficos e obesos apresentem redução do estresse oxidativo, avaliado pela concentração de malondialdeído no plasma utilizando o método descrito por Buege & Aust (1978) com modificações. Espera-se encontrar uma redução de pelo menos 12% nas concentrações de malondialdeído plasmático após a intervenção.
