This is a randomized, double-blind, controlled clinical trial with two parallel groups. Experimental group: 47 patients with squamous cell carcinoma of the head and neck undergoing radiotherapy treatment at a philanthropic hospital in Montes Claros will receive daily, for a period of 30 days, a powdered dietary supplement developed according to Brazilian sanitary regulations Resolution of the Collegiate Board number 275 of 2002 and Resolution of the Collegiate Board number 243 of 2018. The supplement is composed of vegetable flour with the addition of gallic acid and formulated to contain approximately 25 percent protein, 54 percent carbohydrates, and 21 percent lipids, presenting antioxidant properties and nutritional value similar to commercial nutritional supplements for oncology patients. Control group: 47 patients with the same clinical characteristics will receive daily, for the same period, the same dietary supplement without the addition of gallic acid. Randomization will be performed through a simple electronic draw and blinding will be double, involving both participants and researchers responsible for the analyses. Assessments will be conducted before and after the intervention period and will include anthropometry with measurements of weight, height, body mass index, arm circumference and skinfold thickness, and handgrip strength; biochemical tests including complete blood count, albumin, prealbumin, total cholesterol and fractions, triglycerides, glucose, glycated hemoglobin, and C-reactive protein; dietary intake analysis through a 24-hour recall classified according to the Food Guide for the Brazilian Population; and food acceptance assessment through structured interviews on preferences, aversions, and taste alterations analyzed using the IRAMUTEQ software

Trata-se de um ensaio clínico randomizado, duplo-cego e controlado, com dois grupos paralelos. Grupo experimental: 47 pacientes com carcinoma de células escamosas de cabeça e pescoço em tratamento de radioterapia em hospital filantrópico de Montes Claros receberão diariamente, por um período de 30 dias, um suplemento alimentar em pó elaborado segundo as normas sanitárias brasileiras Resolução da Diretoria Colegiada número 275 de 2002 e Resolução da Diretoria Colegiada número 243 de 2018. O suplemento é composto por farinha vegetal com adição de ácido gálico e foi formulado para conter aproximadamente 25 por cento de proteínas, 54 por cento de carboidratos e 21 por cento de lipídeos, apresentando propriedades antioxidantes e valor nutricional semelhante a suplementos nutricionais comerciais para pacientes oncológicos. Grupo controle: 47 pacientes com as mesmas características clínicas receberão diariamente, pelo mesmo período, o mesmo suplemento alimentar sem a adição de ácido gálico. A randomização será realizada por sorteio eletrônico simples e o mascaramento será duplo, envolvendo participantes e pesquisadores responsáveis pela análise. As avaliações serão conduzidas antes e após o período de intervenção e incluirão antropometria com aferição de peso, altura, índice de massa corporal, circunferência e prega cutânea do braço e força de preensão manual; exames bioquímicos com hemograma, albumina, pré-albumina, colesterol total e frações, triglicerídeos, glicemia, hemoglobina glicada e proteína C reativa; análise de consumo alimentar pelo recordatório de 24 horas com classificação segundo o Guia Alimentar para a População Brasileira; e avaliação de aceitação alimentar por meio de entrevistas estruturadas sobre preferências, aversões e alterações de paladar analisadas com o software IRAMUTEQ

Patients over 20 years of age. Both sexes. Diagnosis and treatment of head and neck cancer in a hospital participating in the study. Participation voluntarily authorized through signing of the Free and Informed Consent Form. Presence on the scheduled days for data collection and nutritional assessment

Patients who discontinue cancer treatment or do not follow the instructions related to the use of the dietary supplement. Patients with allergies or intolerance to any ingredient of the formula. Diabetic patients. Patients using feeding tubes. Oncology patients with neoplasms in anatomical sites other than the head and neck. Patients not identified by the researchers. Patients who refuse to participate or have not signed the Free and Informed Consent Form
