This is a single-blind, randomized controlled clinical trial. To this end, twenty healthy and active men participated, in a randomized manner, to two experimental trials involving the ingestion of breakfast and tea mate (BFT), and only breakfast (BF). After the meal ingestion, participants rested for 60 min before performing a 60 min cycle ergometer exercise at 65% of maximal oxygen volume (VO2max).

Male individuals, aged between 18 and 35 years old, who practiced regular physical exercise (at least 3 times a week with a minimum duration of 1 hour/day) with eminently aerobic characteristics for at least 6 months were invited to attend the laboratory. no evidence of metabolic diseases such as diabetes mellitus, heart disease, respiratory disease or hypertension, no aversion or intolerance to the study foods and no user of tobacco, alcohol, supplements or medications that could affect energy metabolism.

55 volunteers were recruited for initial laboratory evaluation. Only those evaluated who presented a negative response to all questions in the PAR-Q questionnaire, coronary risk below average, fat percentage less than 25% and Body Mass Index (BMI) between 18.5 and 24 continued the screening process. 9 kg/m2. Thus, 43 volunteers went on to assess their aerobic capacity (VO2max test). Of these, 20 exhibited VO2max above 45 mL(kg.min)-1 and were selected to participate in the research. Of the 20 participants selected to compose the study sample, six withdrew from participating and one was eliminated for not following the pre-test protocol. Thus, 13 volunteers completed the study.

Continuaram o processo de triagem somente os avaliados que apresentaram resposta negativa a todas as perguntas do questionário PAR-Q, risco coronariano abaixo da média, percentual de gordura menor que 25% e Índice de Massa Corporal (IMC) entre 18,5 e 24,9 kg/m2. Assim, 43 voluntários seguiram para a avaliação da capacidade aeróbica (teste de VO2max). Desses, 20 exibiram VO2max acima de 45 mL(kg.min)-1 e foram selecionados para participarem da pesquisa. Intake of mate tea provided greater lipid oxidation (P < 0.05), representing an average of 32.6% greater lipid oxidation. The concentrations of lactate dehydrogenase (LDH) and aspartate aminotransferase (AST) immediately after exercise were higher than the values observed during fasting when mate tea was not consumed. There was an increase of 7.65% and 8.95% for LDH and AST in this treatment, respectively (P < 0.05). It was observed that the value of ferric reducing antioxidant potential (FRAP) obtained immediately after exercise was higher than that obtained during fasting during treatment with mate tea. Finally, the Perceived Exertion Index evaluated at 5 and 45 minutes of exercise in the treatment without mate tea was higher when compared to the same times in the treatment with mate tea (P < 0.05).

Mate tea is a beverage obtained by the infusion of both leaves and branches of yerba mate (Ilex paraguariensis) after the roasting process. This drink is derived from South America and widely consumed in Brazil, Argentina, Uruguay and Paraguay. Due to its high content of bioactive compounds including phenolic compounds and methylxanthines, mate tea is likely an interesting option to be consumed prior physical exercise. Thus, the main goals of this study were (i) to compare the physical-chemical characteristics, antioxidant capacity, the content of phenolic compounds, methylxanthines and minerals of mate tea prepared in three ways, and (ii) to evaluate the effects of the acute pre-exercise intake on metabolic, muscle damage and oxidative stress biomarkers in men exposed to continuous exercise on cycle ergometer. First, three types of mate tea (soluble, in sachets and in bulk) were characterized regarding their physical-chemical parameters, antioxidant capacity, mineral composition, and the content of phenolic compounds and methylxanthines. Lower pH coupled with higher acidity and total soluble solids were found in the soluble tea compared to the sachet and the bulk. The concentration of minerals, total phenolics, chlorogenic acids, caffeic acid, total flavonoids, methylxanthines and antioxidant capacity were higher in soluble tea compared to other preparations. Next, a clinical trial was conducted with thirteen active healthy men in a randomized, two experimental trials: breakfast and mate tea (BT), and breakfast (B). The participants consumed the meal and remained resting for 60 min before starting a cycle ergometer exercise at 65% of the maximum oxygen uptake (VO2max) for up to 60 min. The following parameters were collected during the tests: biochemical, heart rate (HR), gastrointestinal and systemic symptoms, ratings of perceived exertion (RPE), gas samples to calculate of substrate oxidation and obtaining the respiratory quotient (RQ). It was verified that the area under the insulinemic curve, the RQ and the carbohydrate oxidation were higher in the B test when compared to the BT test. Conversely, higher fat oxidation was observed in the BT test in comparison to B. Overall, no significant differences between the experimental trials on gastrointestinal and systemic symptoms, HR and plasma concentration of lactate, glycemia, insulin and free fatty acids. The activities of both LDH and AST immediately after exercise were higher than during fasting in the B test. It was observed that the total antioxidant capacity of plasma obtained following exercise was higher than that obtained in fasting in the BT test. The RPE assessed at either 5 and 45 min of exercise were higher in the B test when compared to the BT test. No significant differences were observed between the two experimental trials or between the time points evaluated in each trial for creatine kinase, alanine aminotransferase, malondialdehyde and uric acid. Collectively, the results obtained here showed that soluble mate tea display higher content of phenolic compounds and antioxidant capacity compared to other forms of preparation. In addition, the consumption of this type of tea just one hour prior to moderate-intensity aerobic exercise increased the fat oxidation while decreased carbohydrate oxidation during activity and increased protection against muscle damage and plasma antioxidant capacity.

O chá-mate é uma bebida obtida pela infusão das folhas e ramos da erva-mate (Ilex paraguariensis) após o processo de torrefação. É derivada da América do Sul e muito consumida no Brasil, Argentina, Uruguai e Paraguai. Devido ao seu alto teor de compostos bioativos, tais como compostos fenólicos e metilxantinas, o chá-mate pode ser uma opção interessante a ser consumida pré-exercício. Nesse contexto, esse estudo comparou as características físico-químicas, a capacidade antioxidante, o conteúdo de compostos fenólicos, metilxantinas e minerais do chá-mate preparado de três formas, bem como avaliou os efeitos da ingestão aguda de chá-mate pré-exercício sobre indicadores metabólicos, de dano muscular e estresse oxidativo em homens expostos ao exercício contínuo em cicloergômetro. Inicialmente, foi realizada a caracterização de três tipos de chá-mate (solúvel, em sachê e a granel) quanto aos parâmetros físico-químicos, a capacidade antioxidante, a composição mineral, ao conteúdo de compostos fenólicos e metilxantinas. Observou-se menor pH, maior acidez e sólidos solúveis totais no chá solúvel comparado ao sachê e ao a granel. A concentração de minerais, fenólicos totais, ácidos clorogênicos, ácido cafeico, flavonoides totais, metilxantinas e capacidade antioxidante foram maiores no chá solúvel em relação aos outros chás. Em seguida, foi realizado um ensaio clínico, no qual treze homens saudáveis e ativos participaram, de maneira randomizada de duas etapas experimentais: ingestão de café da manhã e chá-mate (CMC), e café da manhã (CM). Os participantes consumiam a refeição matinal e permaneciam em repouso por 60 min antes de iniciarem um exercício em cicloergômetro a 65% do volume máximo de oxigênio (VO2max) com duração de 60 min. Foram coletados os seguintes parâmetros durante os tratamentos: bioquímicos, frequência cardíaca (FC), sintomas gastrointestinais e sistêmicos, índice de percepção do esforço (IPE), amostras de gases para cálculo da oxidação do substrato e obtenção do quociente respiratório (QR). Observou-se que a área formada abaixo da curva (AAC) insulinêmica, o QR e a oxidação de carboidratos foram maiores no tratamento CM quando comparado ao CMC. De modo contrário, a oxidação de lipídeos foi maior no tratamento CMC comparado ao CM. Não foi verificada diferença, entre as etapas experimentais, sobre os sintomas gastrointestinais e sistêmicos, FC e concentração plasmática de lactato, glicemia, insulina e ácidos graxos livres. As concentrações de lactato desidrogenase e aspartato animotransferase imediatamente após o exercício foram maiores que os valores observados no jejum durante o tratamento CM. Observou-se que a capacidade antioxidante total do plasma obtida logo após o exercício foi maior àquela obtida no jejum no tratamento CMC. O IPE avaliado aos 5 e 45 min do exercício no tratamento CM foi maior quando comparado aos mesmos tempos no tratamento CMC. Não foram observadas diferenças significantes entre as duas etapas experimentais ou entre os momentos em cada etapa para os parâmetros de creatina quinase, alanina aminotransferase, malondialdeído e ácido úrico. Em suma, demonstrou-se que o chá-mate em pó solúvel apresentou maior conteúdo de compostos fenólicos e capacidade antioxidante em relação às outras formas de preparo. Ademais, o consumo desse tipo de chá uma hora antes do exercício aeróbico de moderada intensidade está associado ao aumento da oxidação de lipídeos e diminuição da oxidação de carboidratos durante a atividade, bem como ao aumento da proteção contra o dano muscular e a capacidade antioxidante plasmática.
